Sous vide App for the Iphone.
I was away for a while, I’m quite busy at work these last few weeks and it’s going to be more hectic for me for the next 3 or 4 weeks. I’m not gone though. I received quite a few of messages of readers thinking that I just disappeared, rest assured that as soon as this movie is delivered I’ll be back and posting some of the articles I had to put on hold.
In the meantime, here’s a little news worth mentioning. www.cookingsousvide.com just released an Iphone app “meant to be a time and cooking temperature reference for the home cooked.” The app is called Sous vide. I’ve been playing with it for a while and the first impression I have is that it’s very well done. You’ll find pretty much every types of food in this app and their recommended cooking time and temperatures as well as loads of info about sous vide cookery and sous vide safety. For £1.19 it’s a good tool to have if you’re not sure of your cooking times. It’s difficult to know how long and at what temperature to cook a soft shell crab or catfish. But it’s all their in the app. The cooking times are given in range ie: from 2 to 4 hours. etc… Depending on the thickness of the food you’re cooking.
In my wish list for a future version, a weight/thickness vs temperature/cooking time calculator, maybe based on Baldwin work.

Something like that is now available in the form of the SousVide Dash app. It calculates time to temperature and pathogen reduction for a variety of foods of arbitrary shapes and sizes. Check out http://www.sousvidedash.com or search for SousVide Dash in the app store.
