Reviews Grant Instruments and Sammic.

Since yesterday it’s like Christmas. As I was saying in my previous post, I was expecting a couple of machines from Grant Instruments and they finally arrived. I received a SVP12 and the SV100, respectively a 12 litre water bath and a very nice immersion circulator. That was yesterday, today arrived the SV310 by Sammic, international purveyor of professional kitchen equipment. The SV310 is a professional chamber vacuum sealer and it’s gorgeous.

I’m not going to say more for the moment, I’m going to be testing these machine for a couple of weeks and will write complete separate reviews of each of these equipments. In the meantime I will post some of the recipes I cooked using the various machines.

I can’t wait to get stuck in.

Coming soon Grant Sous Vide review.

I am very excited and for a good reason, the good people at Grant Instruments are sending me a couple of units to try out and review. Next week I will start playing with the SVP12, a 12 Litre waterbath and the SV100, an immersion circulator. No need to say that I’m looking forward to get started.

So stay tuned, I’ll post again as soon as the machines arrive and start testing.

Sous vide App for the Iphone.

I was away for a while, I’m quite busy at work these last few weeks and it’s going to be more hectic for me for the next 3 or 4 weeks. I’m not gone though. I received quite a few of messages of readers thinking that I just disappeared, rest assured that as soon as this movie is delivered I’ll be back and posting some of the articles I had to put on hold.

In the meantime, here’s a little news worth mentioning. www.cookingsousvide.com just released an Iphone app “meant to be a time and cooking temperature reference for the home cooked.” The app is called Sous vide. I’ve been playing with it for a while and the first impression I have is that it’s very well done. You’ll find pretty much every types of food in this app and their recommended cooking time and temperatures as well as loads of info about sous vide cookery and sous vide safety. For £1.19 it’s a good tool to have if you’re not sure of your cooking times. It’s difficult to know how long and at what temperature to cook a soft shell crab or catfish. But it’s all their in the app. The cooking times are given in range ie: from 2 to 4 hours. etc… Depending on the thickness of the food you’re cooking.

In my wish list for a future version, a weight/thickness vs temperature/cooking time calculator, maybe based on Baldwin work.

Check out the www.cookingsousvide.com website for an indepth description.
