BPI publishes sous vide DVD
Some of you might have heard about it, the Editions BPI, french publishing company dedicated to the hospitality industry, released a suite of great DVDs. Including one exclusively talking about sous vide cooking. this DVD is hosted by Bruno Goussault, the sous vide guru. It covers a vast array of subject from the chemistry of cooking to hygiene and includes a bunch of pretty cool recipes.
Another DVD is dedicated to Molecular Gastronomy with Recipes from Émile Jung and technical talk by the french chemist Hervé This. And lastly a couple of DVD about traditional french cooking techniques and recipes.

I bought the sous vide cooking, culinary techniques 1 and Molecular gastronomy DVDs and watch them with great interest, they are very complete and you can tell, they are supposed to be used by culinary students or professionals. There is a couple of things I would change about these DVDs, first , to be able to use the video in full screen instead of the fixed size window they have at the moment and somebody need to wake up the narrator, he sometimes makes me want to slit my wrists. Yes both of them…. Other than that they are a mine of information and good tips. A must have. In french only.

je suis assez d’accord avec vous. mais ce dvd ne rend-t-il pas la traduction du guide de cuisson sous-vide anglais supeflue ? (le ebook du fabricant de machine sous-vide dont l’ai oublié la marque) Je veux dire : y-a-t-il des infos données dans ce ebook qui bruno goussault ne donne pas ? merci d’avance pour votre reponse – Nicolas
